I am always on the hunt for great family recipes. It has to have a couple of things to make it on my list of go-to recipes. First it has to be easy. I will be honest here I am not the world’s best cook, far from it, so I like easy. Second, it has to have a manageable list of ingredients. If the list is too long I am out. Third, it has to be kid-family friendly. By that I mean my family has to like it and want to eat it!
This recipe meets all three criteria. It is super easy. It has about 6 ingredients and the family loves it.

My daughters and I love to make this recipe together. It really is simple enough that my kids can make it on their own and they are 12 and 10. So there is hope for me!
We have made this dish several times and it always comes out tasting delish. It is even better in the summer when you are able to use fresh tomatoes! Sometimes we get a little fancy and buy some of the specialty tomatoes, like the heirloom varieties. Yummy
We make this recipe for 4 people, at least two of them are hearty eaters.
Ingredients
2 boneless chicken breast
2 cups of chopped fresh tomatoes – variety of your choice
1/2 cup basil – sliced in ribbons
2 tsp fresh minced garlic
2 tablespoons extra virgin olive oil
4 tablespoons butter
salt/pepper/Italian season/red chili flakes
pasta – variety of your choice
Cooking Directions
Season the chicken with salt/pepper/Italian seasoning/red chili flakes. Drop it in your pan with 2 tbsp of olive oil. Cook for about 5 minutes each side. I like to cut my chicken into smaller pieces because it cooks better and faster that way.
You can start your water for your pasta now. Drop in the pasta once the water boils.
Once your chicken has been cooking for about 5 minutes per side go ahead and drop in your 2 cups of chopped tomatoes and 1/2 cup of basil into the pan.
Next add in your 4 tbsp of butter – it will make the sauce silky and creamy – and add the garlic.
Cook all the ingredients together until chicken is fully cooked and everything is nicely married. Add your cooked pasta to the chicken and then serve.
We love to grate a generous amount of fresh parmesan on top of each bowl of pasta. ( I often add some of the parmesan to the sauce before I serve so the sauce is even creamier)
