Dinner is a tough one for me. I struggle to come up with easy recipes that everyone in the house will eat and love! That is a tall order for sure. Easy is the key for me. I don’t love to cook and often lack the motivation to do it.
One of the things we are trying to do as a family is eat at home more. We have been known to eat out or eat take out a lot. Not only is that expensive but it is not always the healthiest of meals.
So when I spotted this recipe by Ree Drummond at www.ThePioneerWoman.com I was sure it would be a family and Mom favourite. The original recipe was Fire Roasted Red Pepper pasta. The kids and I made the recipe and it was good, but the kids didn’t LOVE the red pepper flavour.
My 12-year-old daughter suggested it would be better with red peppers AND roasted tomatoes! And that was a sure fire winner! We actually made it tonight for my daughter’s friends and they LOVED it too!
What I liked best about this recipe is it is loose and not about exact measurements. You are able to tailor the recipe to your own tastes.
Recipe
1 onion – diced
4 to 6 cloves of garlic – minced
one jar of fire roasted red peppers
one jar roasted tomatoes
olive oil
vegetable stock
cream
pasta of your choice
Instructions:
I took the diced onion and garlic and sauteed them in a pan with some olive oil until the onions were translucent. I then added the jar of peppers and the jar of tomatoes. Cooked them together for a few minutes until the tomatoes and peppers get warm. Then toss the entire concoction into a blender to puree. Once pureed pour it back into the pan. This is where I add the vegetable stock and cream for taste and to thin the sauce. I add about 1/3 cup of each. Then add your cooked pasta to the pan and toss around. I added fresh grated parmesan cheese and crushed chilli peppers for extra flavour
You can choose the brands that you like or are available. The brands shown just happened to be what was available at my local grocery store.
This recipe was so easy to make the kids can practically make the entire meal themselves. Add a garden or caesar salad and a nice crusty bread to the table and I say that is a sure family favourite meal.
